Her treasured recipes are loved by family and friends alike. Each issue we will bring you one of Grandma Cook-A-Lot's mouth watering concoctions, complete with estimated cost from supermarket to table.



Thai Pumpkin Stir fry

Serves 6

Approximate overall cost $10-$12 (depending on product prices at time of purchase).

Ingredients:

2 tbsp oil (olive or canola)
500g thinly sliced strips of topside steak or chicken breast
1 tbsp oil extra
1 onion roughly chopped
1 red capsicum finely sliced
3 med sized carrots sliced diagonally
100g sliced green beans
1 can of baby corn spears
1 x 410g can of Thai pumpkin condensed soup (we used Campbell's)
1 cup water
1 tbsn crunchy peanut butter
1 pkt fresh noodles

Method:

Heat 2 tbsp oil in frypan or wok and cook meat until tender.
Set aside.
Using same pan, add extra oil and cook onion until soft (about 1 min).
Add capsicum, carrots, beans and corn. Stir fry 2 mins.
Mix soup with water and peanut butter and add to vegies.
Cook until all is well coated and heated through.
Add meat to mixture.
Heat noodles according to packet instructions and mix through.

Dinner is served.
